In this workshop dedicated to the sense of taste, you will experience the everyday life of a farm in Laterza. The activities carried out relate to the breeding of dairy cows and the different processes in a dairy.
The company has a long history: in Roman times it was a Mansio, a post office along the “Via Appia” (Appian Way). Nowadays, brown alpine cows are bred mainly with organic food and they produce the milk for the adjoining dairy.
With wisdom, tradition and passion, the owners of the farm process the milk and turn it into tasty products, from mozzarella to the typical Apulian burrata.
During the three-hour workshop, you will get to know the world of cheese dairy first hand. Look forward to a complete tour of the farm as well as a visit of the animal breeding and dairy.
On the one hand, you get a deep insight into the history of the dairy with anecdotes and stories that characterize them. On the other hand, you become a protagonist.
With disposable overshoes, aprons and caps you actively participate in the various activities during the educational workshop.
Our “casari” (cheese makers) share with you their knowledge, their culture of “healthy eating” with local products. After opening the doors of the laboratory, you work with the high-quality and pure products whose taste and aroma are typical of Apulia.
You can bring home and taste all “Bocconcini, nodini, scamorze, trecce” you will produce.
