    We’re in Agnone, in the heart of Alto Molise. Here, an authentic land awaits you – rich in pastures, transhumance, ancient traditions, and fresh mountain air you’ll want to breathe deeply.

    Molise is still a little-known region, which makes it all the more fascinating and ready to be discovered. Wild, green, peaceful… a hidden gem nestled between mountains and sea.
    Agnone, one of the most picturesque villages in the area, is famous not only for the historic bells of the Pontifical Marinelli Foundry, but also for its extraordinary cheeses.

    The milk used comes from ethical farmers who raise free-grazing Podolica cows and prioritize animal welfare. The result? Authentic cheeses made only from top-quality raw materials.

    Their story is tied to the ancient paths of transhumance – those long grassy trails known as “tratturi”, walked by shepherds and their flocks for centuries, since the times of the Samnites.

    Serena, Francesco, and Antonia – the new generation – carry forward this ancient know-how with passion and innovation. Along with their parents, Franco and Rosetta, they’ll welcome you to discover the art of cheesemaking up close.

    ANYWAYS EXPERIENCE: WORKSHOP AND TASTING

    During the workshop, you’ll watch milk transform before your eyes. Part magic, part science – and all passion.

    Skilled hands shape wonders like Agnone’s Caciocavallo, stracciata, scamorza, bocconcini, and other traditional cheeses of Molise.
    You’ll hear the amazing story of how, almost by accident, a caciocavallo hung to dry in a cellar was awarded as one of the 54 best cheeses in the world.

    Dairy in Agnone At the Di Nucci dairy, you’ll find excellence in the Caciocavallo of Agnone – a Traditional Agri-Food Product (P.A.T.), a flavorful gem deeply connected to this land. And you won’t just watch – you’ll get your hands in the mix too! Shape, stretch, and create your own cheese… a unique and fun experience for everyone.

    The visit continues in the fascinating Museum of Cheesemaking Art and Transhumance, a place full of history, emotion, and ancient objects.
    You’ll see original tools of old cheesemakers and dive into the rural culture.
